Milk has often been touted as a rich source of calcium, and rightly so. Fresh raw milk does provide significant amounts of calcium, but not processed milk. The heat of pasteurisation alone breaks down the compound molecules that consist of calcium, magnesium, carbon, and phosphates, reducing each component into insoluble mineral salts. The calcium (and other minerals) in processed milk cannot be absorbed by your body. What’s more, heat also completely destroys phosphatase – the enzyme found in raw milk that helps your body absorb milk calcium. the paleo diet followers are aware of this information and choose to stay clear of any dairy based products – ensuring every food source they consume is full of nutrition and holds little negative effects on maintaining good health.
